Macaroons with a holiday zing

My present for our readers is Twelve Days of Christmas Baking. Each installment, I’ll be offering you a favorite recipe to try for your own Christmas baking.

Chewy macaroons. What’s not to love? In these macaroons, you have the heavenly coconut and ruby cranberry nuggets, with the special zing of orange zest.

Coconut Cranberry Macaroons

2/3 cup sugar
2 large egg whites, room temperature, lightly beaten
½ cup dried cranberries, finely chopped
Finely grated zest of 1 orange
1 TB pure vanilla extract
½ tsp salt
3 cups shredded coconut

Heat oven to 350 degrees.
Line two baking sheets with parchment.

Whisk egg whites, sugar, cranberries, orange zest, vanilla, and salt.
Toss in coconut with egg mixture until completely coated.
Form into pyramid shapes with moistened finger tips and space 1-inch apart on parchment paper.
Bake until the whole macaroon is nicely toasted, about 20 minutes. Check at 15 minutes, since this can brown quickly.
Transfer to a rack and cool.
