Day Five of the annual Rosiethon finds Rosie combining two of her favorite flavors to make Peanut Butter Coconut Bars.
Peanut Butter Coconut Bars
1 ½ sticks butter, softened
1 cup sugar
1 cup smooth peanut butter
1 large egg
1 tsp vanilla
½ tsp salt
2 cups flour
2 cups coconut
½ cup chopped peanuts.
Cream butter and sugar until light and fluffy.
Add peanut butter.
Beat in egg, vanilla, and salt.
Slowly, beat in flour.
Stir in coconut.
Press evenly into a greased 10 ½ x 15 ½ pan.
I use a sheet of plastic wrap on top of the mixture and roll it out with a mini-rolling pin.
Sprinkle peanuts over top and press in.
Bake at 350 degrees for 20-25 minutes, until nicely tanned.
Cool on racks.
Cut into squares or bars.
