Welcome to Day 6 of Rosie’s Christmas baking.
Today’s treat is Heavenly Delights.
I love these little clouds of perfection confection.
They are . . . heavenly.
1 stick butter, softened
½ cup shortening
2/3 cup sifted powdered sugar (Sift before measuring.)
1 tsp vanilla extract
1 TB lemon juice
2 cups flour
½ cup finely chopped pecans
Sifted powdered sugar
Cream butter and shortening.
Gradually add 2/3 cup sugar, beating until light and fluffy.
Gradually add flour, beating well.
Stir in chopped pecans.
Note: Be sure your pecans are finely chopped. These are very delicate little balls and if the pecan pieces are too coarse, well … the cookie crumbles.
Roll into small, tight balls.
Place on ungreased cookie sheets and bake at 350 degrees for 20 minutes.
Remove immediately and roll in powdered sugar.
Place on racks to cool.
Cool and roll again in powdered sugar.
