Rosie is still hanging in there, baking her little fingers to mere nubs. Welcome to Day 10 of my Christmas Rosiethon. I present to you festive White Christmas Fudge with accents of dried cherries and almond extract.
White Christmas Fudge
2 ½ cups confectioners sugar
⅔ cup milk
½ stick butter
12 ounces white chocolate, coarsely chopped
½ tsp almond extract
¾ cup dried cherries
¾ cup toasted almond slices
Line an 8-inch square pan with buttered foil.
Mix confectioners sugar and milk in heavy saucepan.
Over medium heat, add butter and bring to a boil, stirring constantly.
Boil for another 5 minutes without stirring.
Over low heat, add chocolate and almond extract.
Whisk until chocolate melts and mixture is smooth.
Stir in dried cherries.
Pour mixture into prepared pan.
Refrigerate 2 hours or until firm.
Cut into 1-inch squares.
